Al Wadi Falafels with Babaganoush & Pomegranate Molasses
1 packet Al Wadi Falafel Mix (FALAFM)
Olive oil for frying (OILOE)
1/2 cup fresh parsley, finely chopped
1/4 cup pomegranate molasses (MOLPOM)
2 tablespoons cider vinegar (VINC1)
2 teaspoons sumac (SUM)
1/2 cup EVA Extra Virgin Olive Oil (OLIOE)
1 teaspoon sugar (SUGA1)
1 clove garlic, crushed
6 Pita bread
1 can Al Wadi Babaganoush (BABAR)
Add 1 cup of boiling water to falafel mix, stir and leave to soak for at least half an hour. Once soaked add parsley and mix thoroughly.
Roll out tablespoons of the mixture into discs (you should get approximately 16 falafels).
Place a large frying pan over a medium heat. Add a couple of tablespoons of olive oil and fry the falafels for 2 -3 minutes on each side until golden brown.
While the falafels are cooking make the dressing. Simply whisk all ingredients until combined until emulsified. Dress your salad with this dressing.
Warm up your pitas, cut in half and generously fill with babaganoush, fried falafels and extra dressing.
Garnish with additional parsley and sumac, serve and eat immediately.
