These pecans are the perfect treat and make a great homemade gift. The slow process of caramelisation leaves the nuts covered in a crisp, cinnamon infused, sugary coating and nuts the perfected roasted.
Cinnamon Roasted Candied Pecans
3 cups pecan halves (PECAN1)
3/4 cups white suagr (SUGA1)
1/2 teaspoon salt (SALTI1)
1/2 teaspoon of ground cinnamon (CINNQP)
Mix a 1/4 cup of the sugar with the salt and cinnamon.
Place another 1/4 cup of the sugar in large pot over a medium high heat. Add the pecans just before the sugar turns into 100% caramel (you still want there to be some sugar crystals).
Keep on the heat while mixing constantly for three minutes then add 1/4 cup of water (this helps to evenly distribute the caramel).
Once water is evapourated add another 1/4 cup of sugar. Cook for a further two minutes, then add another 1/4 cup of water.
Once the water has evapourated sprinkle the cinnamon sugar over the pecans and mix to ensure they are fully coated.
Empty pecans onto a baking tray covered with baking paper and leave to cool and harden.
Pecans are ready to eat once cool. Store in airtight conatiner for up to two weeks.
