Paprika

Whilst pungency is a term widely used when describing whole dried red peppers, Paprika for western markets is normally graded by colour.

The amount of pigment in the ground product is measured using ASTA (American Spice Trade Association) standardized testing. The more colour in the product – the higher the number.

Often in the market you will find paprika that is quite brownish.  This is likely 60 ASTA.

At Davis, our range starts at 70 ASTA (brick red - available in sweet ground or smoked varieties) and goes up to 140 ASTA (deep chilli red – available in smoked).
