Gumbo is a classic Louisiana stew made with seafood, sausage and what Louisianians call the 'Holy trinity of vegetables' namely celery, capsicum and onions. It is thickened with a darkened roux which gives a lovely golden depth.
Prawn and Chorizo Gumbo
2 sticks of celery, diced
2 capsicums, diced
2 brown onions diced
2 -3 red chillies, finely chopped (CHILWSF)
2 chorizo sausages, chopped (CHORIZO)
2 tablespoons of crushed garlic (GARLCR)
1 teaspoon of white pepper (PEPWHIG)
1 teaspoon of smoked paprika (PAPSMKD)
1/2 cup canola oil (CANOIL1)
2/3 cup plain flour (FLOSC)
1 tin Manufuso Organic, Chopped tomatoes (TOMCO400)
1 litre chicken or fish stock (CHICKB2.5)
1 ½ cup frozen, sliced okra (OKRAFS)
500 grams of prawn (PRAWMB)
Basmati Rice (RICBBK)
Freshly chopped parsley
Heat oil in a frying pan until hot. Add flour and cook for 10 minutes, or until dark golden brown, stirring often. Remove from the heat and allow to cool a little before adding tomatoes and stock. Bring to the boil.
Meanwhile, sauté celery, capsicums, brown onion, garlic, chilli and chorizo in oil over a medium high heat for 10 minutes until golden brown. Add paprika and pepper and cook for a further two minutes.
Once cooked add this to your soup. Cook for a further 20 minutes - you may need to add a little more water to thin the stew a little at this point.
Add prawns and okra and cook for 7 to 8 minutes.
Serve your gumbo with rice and a garnish of parsley.
