When soaked in water, the seeds of several basil varieties become gelatinous, and are used in Asian drinks and desserts such as Falooda and hote. Falooda is a cold and sweet beverage containing many ingredients and is very popular in South Asia. Traditionally it is made by mixing Rose Syrup with Vermicelli, Psyllium, basil seeds, jelly pieces and tapioca pearls along with either milk, water or ice cream.
