Adzuki beans are a small, russet coloured bean with a sweet flavour. They are particularly popular in Japanese cooking where they are used in confections such as the popular Yokan, Red bean paste and soups. Also popular in red bean ice-cream. The two common names for this bean originate from Japan for Adzuki or India for Chori.
