Jackfruit is a tropical Asian fruit that when picked while unripe or 'green' can be used as a meat substitute. It makes delicious ‘pulled pork’!
BBQ Jackfruit Burgers
Pulled Jackfruit
2 can of Natures Charm jackfruit in brine (JACFY)
2 tablespoons of olive oil (OLIOE)
1 teaspoon smoked paprika (PAPSMKD)
1/2 teaspoon dried oregano (OREGA)
1/2 teaspoon ground cumin (CUMGPP)
1 pinch of chilli flakes (CHIFLP)
3/4 cup of BBQ sauce (BBQSFM2)
1/2 cup of water
To serve
1 cup of guacamole (GUAC)
2 cups of shredded red cabbage
1/2 cup of fresh coriander leaves
6 fresh buns
Prepare the jackfruit by draining, removing the core and shredding a little. You can do this with your hands – it shreds quite easily. Once shredded give the jackfruit a thorough rinse and drain well.
Add the jackfruit and all of the spices to a frying pan with the oil and cook for 5 minutes over a medium heat.
Add the BBQ sauce and water and cook for a further 15 minutes, stirring occasionally.
Once the jackfruit is done toast your buns and assemble as desired with your cabbage, coriander and guacamole.
Leftover jackfruit keeps for up to a couple days in the fridge, though best when fresh.
