Instructions:

Ingredients:

1 x can Jackfruit (JACFW)

Olive Oil (OLIOE)

1 x small brown onion diced

2 x gloves garlic or crushed garlic (GARLC200)

1 x Tablespoon Paprika (PAPSWT)

½ teaspoon chilli powder (CHILPFP)

1 x teaspoon cumin (CUMWPP)

1 x teaspoon coriander powder (CORIGP)

2 x Tablespoons Brown sugar (SUGB)

Salt and pepper to taste

½ cup BBQ sauce (BBQSW)

¼ cup tomato ketchup (TOMKH12/300)

2 x teaspoons apple cider vinegar (VINC6)

1 x teaspoon worechester sauce (WORCS300)

Dash of maple syrup (MAPFL)

SPICED CASHEW NUTS

1 x Cup Cashew nuts (CAS4500)

1 x teaspoon cumin

1 x teaspoon coriander powder

1 x teaspoon paprika

For the SLAW

1 x cup shredded cabbage

1 x cup grated carrot

½ cup fresh coriander

1 x lime

Dash of olive oil

Salt and pepper to taste

Kewpie Mayo optional dressing

Step by Step:

1. Drain the jackfruit and rinse with water. Shred and place in a bowl

2. Heat some olive oil in a pan and add the garlic, and onion. Saute until lightly browned.

3. Add the jackfruit to the pan with all of the spices

4. Add bbq sauce, tomato ketchup, apple cider vinegar, worechester sauce and maple syrup to the pan.

5. mix well and cook for 10 minutes

6. To make the spiced cashew nuts heat some olive oil in a pan, add cashews and spices. Toss gently until lighty browned.

7. to make the slaw toss all of the slaw ingredients together in a bowl

8. Assemble Tacos and enjoy
