This simple dinner can be made in flash and packs a punch because of the black bean and chilli sauce. Feel free to use what vegetable you have on hand, although beef broccoli is a classic Chinese combination that is hard to beat!
Black Bean, Beef and Broccoli Stir Fry
3 tablespoon of canola oil (CANOIL1)
500 grams of high quality lean beef, sliced into thin slivers
500 grams of Frozen IQF Broccoli, defrosted (BROCF1)
1 packet of snap peas
1 tablespoon of crushed garlic (GARLCR)
1 tablespoon of crushed ginger (GINGC)
½ jar of Black Bean Sauce with Chilli (SAUBB)
2 tablepsoons of soy sauce (SOYLGF)
Freshly steamed Jasmine rice (RF1R)
Freshly chopped spring onions, or coriander
Heat a large wok, or frying pan until very hot. Add one tablespoon of oil and cook the beef in two or three batches until just browned - take care not to overcook.
Reduce the heat and add broccoli, snap peas, crushed garlic and ginger, black bean sauce and soy sauce. Cook for 3-5 minutes, taking care not to overcook to the veges.
Serve immediately with rice or noodles
