A Jamaican style chicken dish. The chicken is simply marinated and chargrilled-the magic to this dish is the rice part. Try to use all the different rices, I think that’s the key to this dish. Don’t be shy to season the dish with fish sauce, peanuts and coriander.
Chicken Rub:
100g smoked
10g cayenne powder
10g coriander powder
15g cumin powder
25g onion powder
10g garlic powder
300g brown sugar
150g table salt
Coconut creamed rice (6 portions):
75g black rice
75g brown rice
75g wild rice
75g white rice
500ml coconut cream
100g Kasundi relish (Maison Therese)
Seasoning: salt, fish sauce, fresh lime juice
100g coriander
Chicken marinade:
1.2kg chicken thigh or breast skin on
60g chicken rub
3Tbsp Olive oil
To Finish:
100g coriander
200g spinach
50g mint
Chicken Marinade:
Mix everything together and leave in the fridge overnight.
Chicken rub:
Mix everything together and store in an airtight container.
Coconut creamed rice:
Cook all rice separately until soft.
When cooked-add the rice to one pan and stir in the coconut cream.
Cook the rice and coconut until thick and creamy.
Mix in the relish into rice and season with your seasonings
When cool-mix in your coriander.
Now keep at room temp for your chicken or fridge for another day.
To Finish:
Lightly chop herbs so it can be mixed in the reheated rice evenly.

Roasted peanuts (smashed up a little)
Fish sauce
Get your frying pan or skillet very hot and start cooking your chicken.
Reheat your rice in the microwave until warm.
Mix the rice with the spinach and herb mix
Plate your rice first, cut your cooked chicken up and finish with the nuts and a little fish sauce.
