Canihua (pronounced “ka-ni-wah”) is also known as “baby quinoa”. Sharing the same nutritional values with quinoa, canihua is just a smaller grain pod and darker in colour, while still being high in protein, iron and fibre.
Like quinoa, canihua is not a wheat product, so is ideal for those who are gluten free. Cooking canihua is exactly the same as cooking quinoa, rice or couscous where you boil one part canihua to two cups of water or stock.
