This soup is a great winter warmer using our delicious organic chopped tomatoes. For extra creaminess I have added some cashews, however, if you don’t have cashews on hand some parmesan can be added last minute to replicate this rich creaminess.
Cannellini bean and tomato soup

Instructions:
Ingredients:
2 tablespoons of olive oil (OLIOE)
1 brown onion finely diced
4 cloves of garlic (GARLCR)
1 large carrot finely chopped
A splash of white wine (about a half cup)
½ an A10 can of organic chopped tomatoes (TOMCHO)
½ cup of cashews (CASHR)
2 400gram tins of cannellini beans (CANB400)
2 cups of vegetable stock or water
½ teaspoon of chilli flakes (CHILFL)
4 bay leaves (BAYL500)
A handful of fresh thyme
100g of baby spinach (optional)
1 jar of capers (CAP99)
Salt and pepper to serve
Step by Step:
In a large pot sauté the onion, garlic and carrots on a medium heat until soft and translucent.
Add the wine and cook for 2 to 3 minutes until evaporated.
Add the rest of the ingredients reserving one third of the cannellini beans for serving and bring to the boil.
Simmer for 30 minutes until the tomatoes have completely broken down.
While the soup is simmering fry the capers . Simply heat some oil up to 180C, then fry the capers until they have stopped hissing (one to two minutes). Drain on a paper towel.
Once the soup is cooked remove the thyme and bay leaves. Carefully blend the soup in batches, add back to the pot and add the remaining cannellini beans and baby spinach to wilt if you are using it.
Season with plenty of salt and pepper and serve with a some fried capers and healthy glug of olive oil on top
