Cooking your own beans takes a little more time than using canned - however, the flavour is superior and the texture is creamier without being mushy. Feel free to cook a big batch of beans a couple of days beforehand and store them in the fridge until you need them.
Cannellini , Tomato and Silverbeet Soup
1 cup dried cannellini beans, soaked overnight in 1L of water (BEANCA1)
1 onion, peeled and cut in half
4 garlic cloves, peeled and crushed (GARLC200)
4 bay leaves (BAYLP)
2 tablespoons olive oil (OLIOE)
150 grams good quality streaky bacon
2 onions, diced
4 garlic cloves, finely chopped
2 tablespoons Vilux red wine vinegar (VINREV)
2 cans of 400g Manfuso organic whole peeled tomatoes (TOMWO)
1/4 teaspoon of chilli flakes (CHIFLP)
3 cups water
3 teaspoons of Massel vegetable stock powder (VEGBD2.5)
1 cup of cooking liquid from the beans
Salt and pepper (SALTI1 & PEPBLAC)
1 bunch silverbeet, stems removed, cut into strips
Juice of two lemons
Place beans, onion, garlic and bay leaves in a large pot with two litres of water. Bring to the boil then simmer for 45 minites, or until beans are tender and creamy but still holding their shape. Drain beans, reserving some of the cooking liquid and pick out the onions, garlic and bay leaves.
In a large pot saute bacon with the olive oil over a high heat until golden brown. Add diced garlic and onions, reduce heat to medium and cook for 10 minutes until golden brown.
Add vinegar, tomatoes, chili flakes, beans, water, stock powder and cooking liquid to the onions. Bring to the boil and simmer for 20 minutes.
After 20 minutes taste the soup, add salt and pepper as desired and squeeze in lemon juice. Place silverbeat in soup and boil for 2 to 3 minutes until just wilted.
Serve immediately with crusty bread. Can be stored in the fridge for up to 4 days, but it is best not to add the silverbeat until just before you eat it - otherwise it will go brown.
