Number of Serves: 6 people as a snack

Instructions:

These masa corn chips are very healthy, as they are baked not fried. Masa lends the chips a very ‘corny’ flavour and ensures they are really crunchy, as this flour is specifically designed for making corn chips.

Ingredients:

Corn chips

1 ½ cups of masa flour (MASFP)

¾ cup of warm water

½ a teaspoon of salt (SALTGI1)

1 tablespoon of neutral oil (CANOIL1)

1 teaspoon of toasted cumin seeds (CUMIW)

2 tablespoons of poppy seeds (POPPSE)

To serve

1 400g can of corn kernels (CORNWKS)

1 400g can of borlotti beans (BORBI)

1 packet of avocado pulp (AVOCPC)

1 pinch of chili flakes (CHILFSC)

Zest and juice of two limes

1 bunch of finely chopped coriander

2 diced tomatoes

1 red capsicum diced

1 red onion finely diced

Step by Step:

Corn chips

Mix all tortilla ingredients together with your hands until the dough comes together. Make a ball with the dough, cover with cling wrap and let it rest for 30 minutes.

Divide the dough into 4 balls. Roll each ball out with a rolling pin (or wine bottle!) between two sheets of baking paper until you have formed a rough rectangle that is 1 mm thick. Score into triangles with a knife, as pictured.

Brush with a little olive oil and then bake at 180 C for 20 minutes, or until golden brown and crispy. Break apart when they come out of the oven and leave to cool on a wire rack.

Dips

For the salsa simply combine, the corn, beans, chili and ½ of the lime, onion, coriander, capsicum and tomato and season with salt and pepper.

For the guacamole mix together the avocado pulp with the remaining tomato, onion, capsicum, lime and coriander. Season with salt and pepper.

Once cooled enjoy your corn chips with the fresh salsa and guacamole.

Alternatively they can be stored in an airtight container for up to a week.
