This is a play on the kiwi classic rice bubble crackles. Quinoa has higher levels of protein, fibre and vitamins and minerals than rice and these crackles are made with chia and coconut oil. So, while they are they are still a treat food, they are a lot healthier than the original and are great for kids lunch boxes and parties. This recipe is also gluten and dairy free.
Crispy Quinoa Crackles

Ingredients:
4 cups of crispy quinoa (QUINCPP)
1/c cup of chia seeds (CHIMIX)
250g of coconut oil (OILCOV)
½ cup of coconut sugar (SUGCOR)
3 tablespoons of cocoa (COCPO)
1 pinch of salt
Step by Step:
Melt coconut oil and allow to cool slightly. Whisk in the cocoa and coconut sugar then mix through the rest of the ingredients. Place in cupcake patty holders and refrigerate until set.
