With an increasing number of people becoming lactose intolerant or deciding to go dairy free – milk alternatives are on rise. Making your own almond milk is a breeze to make, it tastes better than store bought and is a lot cheaper!
Essentially all you need are almonds, a blender and any sweeteners or flavourings of your choice. Here I have used vanilla and dates to give a sweet vanilla taste with notes of caramel from the dates.
Once you have squeezed the milk from the mixture you are left with almond pulp – this can be put in porridge, smoothies, baking, or you can dehydrate it to make almond meal.
You can substitute the almond milk for any recipe that calls for cow’s milk – but it’s so delicious don’t be surprised if you end up just drinking it by the glass straight from the fridge.
