This is another classic from my days at Rye Bar and Grill in Tauranga. The simplicity of this is perfect. I remember making one time for my friends while on holiday around lake Okaraka. At the end of the holiday I’d remade it twice and had to give everyone the recipe.
Pie Base (makes 2 pies)
3 packets rice cookies
200g melted butter
Key Lime Pie
3 condensed milk cans
300g lime juice
600g cream
9 egg yolk
10g lime zest
Pie Base
Blend together and use to line your tray tins.
Key Lime Pie
Mix everything together and split between to two pies.
Leave to set for at least 6 hours before you serve.
