Mock cream soft icing
2kg icing sugar (SUGI1)
455gm Merrywhip (MERRYW15)
285ml water
Mock cream filling
2kg caster sugar (SUGC1)
2kg Merrywhip (MERRYW15)
40gm salt (SALTI1)
1.5lt water
Vanilla essence to taste (ESSV)
Step by Step:
Mock Cream icing
Mix icing sugar and merrywhip together on a low speed for 5 minutes.
Add water and flavour/colour as desired and mix together on a low speed.
Stop machine. Place in second speed and beat until light and smooth.
Mock Cream filling
Mix together on high speed for 10 minutes.
Scrape down bowl.
Place machine on medium speed, add water and vanilla essence gradually over approx. 8 minutes.
