Morrocan Chickpea Soup
1 onion finely sliced
1 tablespoon of crushed garlic (GARLCR)
3 tablespoons of grated ginger
3 tablespoons of olive oil (OLIOE)
1 teaspoons of ground cumin (CUMING)
1 large pinch of chilli flakes (CHILFL)
½ an A10 tin of organic chopped tomatoes (TOMCHO)
1 400g tin of chickpeas (CHICP400)
½ cup of split red lentils (LENTSR)
½ cup of white rice (RBF2)
2 cups of chicken stock (STOCKCHICK)
600 grams of chicken thighs
To serve
Lemon juice
Salt and pepper
Fresh Coriander
Sauté onions, garlic and ginger with the olive oil in a large heavy based pot.
Once softened add the rest of the ingredients and bring to a boil. Simmer for 30 – 40 minutes.
Once everything is cooked remove the chicken, dice, and place back in the soup with the juice of one lemon and freshly chopped coriander.
Season with salt and pepper and add a little more lemon if you desire.
