Otherwise known as Genoese Gnocchi, this vibrant green sauce is fresh and delicious. It can be enjoyed with any type of pasta not just gnocchi.
Pesto Gnocchi
Basil Pesto
1 cup of fresh or frozen IQF basil (BAS250)
2 cloves of fresh garlic
½ a cup of extra olive oil (OLIOE)
1/3 cup of parmesan (CHEEPS)
1/3 cup of pinenuts (PINEB500)
1 teaspoon of salt (SALTI1)
1 500g packet Gnocchi
Simply blend all pesto ingredients together in a blender with two ice cubes. This is to stop the pesto heating up and the basil turning brown. Note it should be quite salty, as once the dish comes together each bit of pasta will have just a little sauce on it.
Cook gnocchi for 2 minutes in a large pot of heavily salted boiling water (or until they start to float).
Combine all ingredients over a medium heat in a frying pan with a little pasta water until an emulsion is formed.
Serve with fresh basil on top and enjoy immediately. Buon appetiteo!!
