This is an easy throw together midweek meal. The peanut sauce uses pantry staples and you can use what veges you have on hand. Easy, simple and tasty.
Peanut Noodles
Peanut Sauce
½ cup of smooth peanut butter (PEANB1S)
1.5 tablespoons of sesame oil (SESOIL295)
1 tablespoon of soy sauce (SOYJ)
1.5 tablespoons of rice vinegar (VINR)
1 teaspoon of freshly grated ginger
1 tablespoon of extra hot Chef’s Choice Sri Racha (CHILSRH)
Noodles & Veggies:
1 packet of Soba Noodles (NOODSOM)
2 tablespoons of toasted sesame seeds (SESTP)
½ cup of freshly chopped coriander
Vegetables – I used some button mushrooms, red capsicum and snap peas
Fry your vegetables over a medium heat for 5 minutes until cooked.
Meanwhile bring all sauce ingredients together over a low heat. Taste and add a little more soy or vinegar depending on your tastes.
Cook noodles for 3 minutes and drain.
Combine all ingredients together. Serve while hot with sesame seeds and coriander on top.
