These scrolls are an update on the classic cinnamon scrolls – the date syrup lends a sticky, dark golden flavour and the walnuts a nutty crunch.
Sticky Date and Walnut Scrolls

Number of Serves: makes 20 scrolls
Instructions:
Ingredients:
Dough
1 tablespoon of dried yeast (YEASTFR)
2 tablespoons of caster sugar (SUGC1)
1 teaspoon of salt (SALTI1)
3 cups of strong flour (FLOURV20)
1 cup of full fat milk
120 grams of soft butter (BUTS)
Filling
1 cup of walnut pieces (WALNPV1)
½ cup of date syrup (DATESYR)
1 teaspoon of ground cinnamon (CINNAG1)
50 grams of softened butter (BUTS)
Step by Step:
Mix together flour, yeast, sugar and salt in your mixer bowl using your dough hook. Add milk and butter and mix for 8-10 minutes until dough is smooth and elastic.
Alternatively you can do this by hand, starting the mixture off in a bowl, then once it comes together turn out onto your bench and knead.
Once dough is kneaded cover and leave to prove in a warm spot in the kitchen for 30 minutes, or until doubled in size.
Meanwhile to make your filling mix together date syrup, cinnamon and butter.
Preheat oven to 180C and grease two muffin trays.
Knock the dough down and roll out into 30 × 50cm rectangle. Spread filling over the dough then sprinkle with walnuts.
Starting from the long side roll the dough to form a log. Trim ends then cut into 20 slices,
Place each slice in your muffin tray and place a couple more walnuts on top.
Leave to prove for a further 20 minutes then place in the oven for 12- 15 minutes until golden brown.
Rest for five minutes, take out of trays and then drizzle with a little more date syrup.
Best served immediately, but can be stored for up to two days in an airtight container
