Biscotti are a twice baked, crunchy Italian biscuit that are perfect for dunking in tea or coffee. This festive version with pistachio and cranberry makes a great gift, especially if dipped in white chocolate.
Cranberry and Pistachio Biscotti
2 cups of standard flour (FLOSC)
1 teaspoon of baking powder (BAKEP1)
½ teaspoon of ground cardamom (CARDG500)
¾ cup of brown sugar (SUGB)
80 grams of soften butter (BUTS)
1 teaspoon of vanilla essence (ESSVANP500)
2 eggs
Zest of one lemon
¾ cup of dried sliced cranberries (CRANSP)
¾ cup of shelled pistachios (PISTK1)
200 grams of white chocolate (optional)
Preheat oven to 160C.
Sift together flour, cardamom and baking powder.
Cream butter and sugar together until fluffy. Add eggs, vanilla, and lemon zest and beat until blended.
Add flour to this wet mixture and mix well. Stir in cranberries and pistachios.
Shape into two logs (approximately 30cm * 12 cm) and bake for 40 minutes or until golden brown.
Leave to cool for 10 minutes then cut into 15mm slices using a bread knife.
Lay biscotti out over baking trays and return to the oven for 10 minutes or until crisp and golden.
Once cool they are ready to eat.
Alternatively you can garnish the biscotti with a little white chocolate. Place chocolate in the microwave for 1 minute. Mix the chocolate and if it is not melted place in the microwave for another 30 seconds. Using a spoon, or a piping bag drizzle the white chocolate over the biscotti. Leave to set, then store in an airtight container.
