This salad is high in fibre and protein with spicy kick from the chilli. I like to make it at the start of week and eat it for lunch at work, as it keeps quite well in the fridge for about 3 to 4 days.
Buckwheat and Chickpea Salad
Salad
1 cup of whole buckwheat (BUCWH)
2 cans of chickpeas, well rinsed and drained (CHICP400)
½ teaspoon of cumin powder (CUMG500)
½ teaspoon of chilli flakes (CHILFSC)
Freshly ground black pepper (PEPECB)
½ teaspoon of turmeric powder (TUMGR)
½ teaspoon of ground coriander (CORIGR)
2 tablespoons of olive oil (OLIOE)
1 teaspoon of salt (SALTI1)
1 large, or several smaller eggplants, cut into cubes
1 punnet of cherry tomatoes, chopped in half
1 bunch of coriander, leaves for the salad, stems for the dressing
Dressing
Coriander stems finely chopped
juice of 1 lemon
1 teaspoon olive oil (OLIOE)
1 teaspoon of salt (SALTI1)
Toast the buckwheat at 180C for about 5 minutes. Once toasted add to a saucepan with two cups of water and 1 teaspoon of salt. Bring to the boil, then reduce and simmer for 10 minutes with the lid on. Remove from the heat, drain excess water, and leave to sit for 10 minutes with lid on.
Combine chickpeas, eggplant, spices, pepper and salt on a baking try with olive oil and roast for 20 to 30 minutes or until chickpeas are toasted and eggplant is tender.
For the dressing simply combine all ingredients.
Mix together the roasted chickpeas and eggplant with the buckwheat, dressing, coriander and tomatoes. This can be served while warm, or cold.
