Chia seeds hold up to 10 times their weight in water and this property makes them a great gelling agent. Standard jam relies on sugar to hold the fruit together and this means that jams are often more than 60% sugar. Without all that additional sugar this jam has fresher, fruitier taste and is a lot healthier too! This can be enjoyed on toast, porridge, in baking or with yoghurt.
Chia Jam
2 cups of fruit (BLUEBF1)
2 tablespoons of chia seeds (CHIMIX)
2 tablespoons of date syrup (DATESYR)
Add the berries to a medium sauce pan and bring to the boil over a moderate heat. The berries need to be cooked down until they break down and become syrupy – this should take about 10 minutes.
At this stage you can choose to blend your berries – this will ensure you have a smooth jam, as opposed to one with chunks of fruit in it. It’s up to you and what you prefer.
Add the chia seeds and date syrup, mix thoroughly. Leave to stand for 5 minutes – in this time the jam should thicken somewhat – if it does not simply add a further teaspoon of chia seeds.
Leave to cool to room temperature and then place in a jar or airtight container and place in the fridge. The jam will set even further once it is fridge cold.
Can be stored in the fridge for up to two weeks.
