These dumplings are similar to what you would find at a traditional Chinese Yum Cha Restaurant. The dough is glutinous and and sticky and prawns are succulent and juicy once cooked.
Prawn Dumplings - Har Gow
Prawn Filling
300 grams raw prawn meat (PRAWMB)
1/4 cup Chef’s Choice bamboo shoot strips, diced (BAMSST)
1 tablespoon canola oil (CANOIL1)
1 teaspoon Suree oyster sauce (SAUCOS)
1 teaspoon Suree sesame oil (SESOIL295)
1 teaspoon sugar (SUGSP)
1/2 teaspoon salt (SALTI1)
1/2 teaspoon crushed ginger (GINGC)
1/4 teaspoon white pepper (PEPWHIG)
Dough
1 cup wheat starch (WSTARCH454)
1/2 cup Dessert Rose tapioca flour (FLOT400)
1 1/4 cups boiling water
3 teaspoons of canola oil (CANOIL1)
1 steamer (STEAMER10 + STEAMER10L)
For the prawn filling chop a third of the prawns in half then mince the rest by chopping finely. Add the rest of the ingredients and mix thoroughly.
To make the dough mix the wheat starch and tapioca flour in a mixing bowl. Pour in boiling water and mix thoroughly. Add in oil and then knead for a couple of minutes until the dough turns into a smooth ball.
Roll the dough into a long cylinder and cut into 18 equal pieces. Cover the dough pieces with a damp paper towel.
Half full your pot with water and bring to the boil. Take a piece of dough and roll it into a 10 diameter circle. Add a heaped teaspoonful of filling and fold it in half and pinch the edges shut, ensuring it is well sealed. To learn to crimp and fold the dumplings it’s a good idea to look at some Youtube videos – they are really helpful.
Continue assembling until all the dumplings are made. Once the water in the steamer is boiling rapidly, steam the dumplings for 6 minutes using high heat. Make sure that they spaced a couple of centimetres apart as they expand while cooking.
Serve while steaming hot with soy sauce and chilli.
