These ribs are finger-licken’ good! You get salty sweetness from the rib sauce and punchy freshness from chillies, garlic and ginger - a winning combination.
Sweet and Sticky Asian Ribs

Instructions:
Ingredients:
1 ½ cups sweet and sticky rib sauce (SAURSS, SAUCRS,SAUCR4)
5 frozen red chillies, finely diced (CHILF250)
2 star anise, crushed (ANIST)
1 tablespoon crushed ginger (GINGC200)
1 tablespoon crushed garlic (GARLC)
1.5 kg pork ribs
1 cup of water
To serve
½ cup fried shallots (SHALLF)
2 tablespoons black sesame seeds (SESSB)
Freshly chopped coriander
Steamed jasmine rice (RF1R)
Step by Step:
Combine sweet and sticky rib sauce, chillies, star anise, ginger and garlic in a large bowl. Add ribs and mix thoroughly, ensuring all ribs are covered in sauce.
Leave the ribs to marinate for at least half an hour (overnight is ideal).
Preheat oven to 180C.
Place marinated ribs and water in large Dutch oven with a lid, or alternatively place in a baking try and cover with tinfoil.
Cook for two hours. The ribs are cooked when the meat is tender and falls away from the bone. You may need to cook the ribs for up to another hour to achieve this.
When the ribs are cooked drain the marinade and place in a frying pan. Reduce on high heat until very thick and syrupy.
Add thickened marinade back to the ribs and mix to ensure all the ribs are coated in sticky sauce.
Place ribs on your serving plate and scatter with shallots, sesame seeds and coriander.
Serve immediately with steamed rice. These ribs are best eaten on the day they are made.
