Coconut condensed milk is a great dairy free alternative that can be easily substituted for the dairy version in most recipes. This caramel slice has everything you want, golden roasted nuts, dark chocolate and sweet sticky caramel to hold it all together.
Nutty Caramel Slice
200g of graham or digestive biscuits (BISHG)
125g of melted butter (BUTS)
1 cup of walnut pieces (WALNPV1)
½ cup of sliced almonds (ALMONDRS1)
½ cup of chopped dark chocolate (CHOCDP)
1/3 cup of pumpkin seeds (PUMPK)
1/3 cup of coconut thread (COCONUTLT1)
1 395ml can of coconut condensed milk (MILKCP)
1 teaspoon of vanilla essence (ESSVANP500)
Preheat oven to 175C. Line and grease a 16cm square baking tin.
To make the base blitz the biscuits in a food processor until fine crumbs are formed. Add the melted butter and blitz again until combined. Place mixture into your tin, cover with a sheet of baking paper and press down firmly until level and compact.
Place walnuts, almonds, chocolate, pumpkin seeds, and coconut thread on top of the base and mix carefully.
Mix together condensed milk and vanilla essence then drizzle over of the slice.
Bake for 30 to 40 minutes, until the nuts are a golden roasted colour and condensed milk has turned into a sticky caramel.
Leave to cool completely. Cut into small squares. Can be kept in the fridge in an airtight container for up to a week.
