‘Pasta e Fagoli’ simply means pasta and beans. It is an easy Italian dish that is wonderfully warm and comforting, perfect for winter nights. Cooking your own beans from scratch as opposed to using canned ones is easy and much more affordable; you just need to take a little more time and soak them the night before.
Pasta e Fagoli
1 cup of dried borlotti beans (BBOR500)
3 bay leaves (BAYL500)
2 medium red onions, finely diced
1 medium carrot, peeled, finely diced
3 cloves of fresh garlic, finely chopped
150 grams of diced bacon or Pancetta
½ teaspoon of dried rosemary (ROSEM)
½ teaspoon of dried thyme (THYMER500)
1 ½ teaspoons of salt (SALTI1)
A 400 gram tin of Sofia cherry tomatoes (TOMCM)
A 70 gram tin of Italissima tomato paste (TOMP70)
3 tablespoons of olive oil (OLIOE)
500 grams of small pasta shells - use any high quality Italian pasta to get the desired result
Rinse beans and then soak overnight in at least 1.5 litres of water.
Drain water from beans and add to a large pot with 2 two litres of water. Bring to the boil and simmer with the bay leaves for about 90 minutes, or until the beans are very soft.
Meanwhile, sauté your bacon in a frying pan until golden brown. Add diced onion, garlic and carrot, as well as the dried rosemary, thyme and salt. Cook for 8 minutes or until the vegetables are soft and light golden brown.
Once your beans are cooked remove the bay leaves and add the cherry tomatoes, tomato paste and sautéed vegetables. Simmer for 10 minutes.
Before adding the pasta you need to ensure sure you have enough liquid, approximately 6 cups is the right amount. (Don’t worry if you don’t have quite enough – you can always add some more once the pasta is cooking).
Add pasta and cook until al dente as per packet instructions.
Once cooked remove from heat and leave to stand for 5 minutes.
Serve immediately with your favourite extra virgin olive oil drizzled on top and freshly ground black pepper.
This dish is best eaten on the day it is made, however it can be bought back to life from the fridge by warming it up with a cup of water.
