This is a basic Italian recipe for tomato sauce which is delicious as is, but it can also be used as a base for a whole multitude of delizioso pasta dishes. For example bacon, peas and mushrooms can be added, or simply any combination of veges you have in the fridge.
Pasta with Tomato Sauce
1/3 cup of olive oil (OLIOE)
1 onion finely sliced
2 cloves of crushed garlic
1 tin of Sofia cherry tomatoes (TOMCM)
1 500g packet of pasta – Gnocchi, Fusilli and Farfalle are all great options (PASTAIF)
50 grams of fresh basil
Parmesan to serve (CHEEPS)
Add olive oil to a large frying pan and sauté onion for two minutes, then add the crushed garlic and cook for a further two minutes.
Add the tomatoes and simmer for 10 minutes.
Season generously with salt and half of the basil leaves.
Cook pasta according to instructions. (Make sure your pasta water is heavily salted!) Once cooked add the pasta to the sauce with about a 1/3 of a cup of pasta water.
Mix pasta through the sauce until an emulsion is formed and every bit of the pasta is covered with the delicious sauce.
Serve immediately with the remaining basil leaves and a handful of parmesan cheese on top.
