When I lived in Washington DC my sous chef made me my first pumpkin pie and I was hooked on the idea of vegetables being used in desserts. The pie is finished in my kitchen with bitter caramel ice cream but smooth bitter chocolate sorbet would work a treat.
Pumpkin Pie
Pumpkin pie base (makes 2 pies) (prep time 8 minutes)
3 rice cookies packs
200g melted butter
Spice mix (makes 6 pies) (prep time 5 minutes)
20g ground cinnamon
25g ground ginger
12g nutmeg
8g ground cloves
35g salt
Pumpkin puree (makes lots) (prep time 15 minutes) (cook time 45 minutes)
1 crown pumpkin
2 butternut
Pumpkin Pie (makes 2 pies) (prep time 15-20 minutes) (cook time 45-60 minutes)
6 eggs
6 yolks
450g brown sugar
680g pumpkin puree
30g spice mix
500g cream
250g milk
2 vanilla pod (scraped)
150g butter
Pumpkin pie base (makes 2 pies) (prep time 8 minutes)
Blend cookies and mix with butter
Split between both tart rings and even press along the bottom and sides.
Pumpkin puree (makes lots) (prep time 15 minutes) (cook time 45 minutes)
Cut, deseed, season, roast in oven at 180C
When cooked leave to cool-then peel and blend puree until smooth.
If you can-leave to hang overnight in the fridge. Put a thin cloth on the bottom of a strainer-put puree on top and wrap leftover cloth over the top of puree. Put a light to medium weight on top and leave. This will help to make the puree as dry as possible.
Keep 680g of puree and freeze down the rest in 680g batches for future recipes. If wrapped well enough it will last 2-4 months in the freezer.
Pumpkin Pie (makes 2 pies) (prep time 15-20 minutes) (cook time 45-60 minutes)
Cream in mixer for 5 minutes
Pass mixture through a sieve
Split evenly between both pie bases
Bake @ 150C for 45-60 minutes or until the centre of custard is 71C
Set in Fridge for at least 3 hours before cutting into portions.
