This curry only takes 40 minutes to prepare, making it an easy winter warmer packed with goodness. You can adjust the amount of chilli as desired - I like to keep it pretty spicy to keep warm in the colder months!
Red Lentil Curry
1 tablespoon crushed garlic (GARLC)
1 tablespoon crushed ginger (GINGC200)
3 onions, finely diced
1 tablespoon of canola oil (CANOIL1)
1 carrot, peeled finely diced
2 cups pumpkin, diced
1 teaspoon black mustard seeds (MUSSB)
1 teaspoon turmeric (TUMGR)
1 teaspoon ground cumin (CUMGPP)
1 teaspoon ground coriander (CORIGP)
1 teaspoon chilli flakes - optional (CHIFLP)
2 tins organic chopped tomatoes (TOMCO400)
I cup red split lentils (LENTSR)
3 cups of water
2 teaspoons Massel vegetable stock powder (VEGBD2.5)
1 teaspoon coconut sugar (SUGCOR)
To serve:
Fresh coriander, roughly chopped
Basmati Rice, steamed (RICBWK)
Roti (MPG)
Sauté garlic, ginger and onions with canola oil in a large pot over a medium heat. Add spices and cook out for about 3 minutes, or until fragrant.
Add tomatoes, lentils, water and stock. Bring to the boil and simmer for 10 minutes.
Add pumpkin and simmer for a further 10 minutes. Taste the curry to ensure the lentils and pumpkins are cooked and check seasoning is right. You may want to add more salt and the coconut sugar if desired.
Serve in bowls with rice, roti and freshly chopped coriander.
Can be stored in the fridge for up to 4 days, or alternatively can be frozen for two months.
