A bread improver is essentially a food additive combined with flour to improve baking functionality. Bread improvers are used to increase the speed of dough rising and improve the strength and workability of the dough. While they are an important element of modern factory baking, some smaller bakers snub them in favour of longer fermentation periods that produce greater depth of flavour.
