This is a leafy plant with edible green pods which are an important part of Cajun cooking styles. It contains gum and so acts as a thickener when added to dishes. Due to this, okra is one of the major ingredients of gumbo. Freshly cooked okra is also commonly added to stews, curries and soups. The leaves of the plant are also edible and are often used in salads. Okra contains good levels of vitamins C and K as well as antioxidants and magnesium.
