These tuna cakes are an easy and economical mid-week meal. The coriander chutney and kaffir lime sri richa give it an extra kick of flavour that will make this dish a hit at home.
Sesame Tuna Cakes with Coriander Chutney, Sri Richa and Wernsing Fries

Ingredients:
Sesame tuna cakes
3 cans of tuna chunks in water drained (approx. 400g) (TUNAB)
1-2 tablespoons of Suree Kaffir Lime Sri Richa (SAUSKLL)
½ cup of finely chopped garlic chives, or spring onions
1 tablespoon of fish sauce (SAUFI200)
3 tablespoons of soy sauce (SOYL295)
Juice and zest of 2 limes
2 tablespoons of fresh ginger
2 cloves of garlic
1 egg
½ cup of instant potato (POTF)
½ cup of Sesame seeds (SESAME1)

Wernsing Premier Fries (FRIESCP)
Coriander chutney
1 large bunch of fresh coriander, including roots and stems
1 clove of garlic
1 teaspoon of ginger
2 tablespoons of soy sauce (SOYL295)
1 teaspoon of sugar (SUGSP)
Juice and zest of 2 limes
Step by Step:
For the coriander chutney finely chop the coriander, mince the garlic and ginger and combine with the rest of the ingredients.
Place fish in large bowl and break up with a fork. Add the rest of the ingredients and mix well.
Using your hands shape the mix into your desired patty size. They can be a bit larger for a main meal, or smaller for a canape.
Cover a large plate with sesame seeds and coat each cake, pressing down to ensure the sesame seeds stick.
Fry over a medium heat in a neutral oil for 2-3 minutes on each side until golden brown.
Bake the fries in an oven tray for 40 minutes at 180C turning halfway through.
Serve while hot with the colander chutney and the kaffir lime sri richa.
