This simple salad is an easy accompaniment to any meal. It goes especially well with lamb.
Simple Couscous salad

Instructions:
Ingredients:
500 grams of Israeli couscous (PLOMB)
3 tablespoons of extra virgin olive oil (OLIOE)
1 teaspoon of crushed garlic (GARLCC)
1 teaspoon of salt (SALTI1)
Juice and zest of three lemons
2 bunches of curly parsley, chopped roughly
Step by Step:
Bring 2 litres of heavily salted water to boil. Add couscous and simmer for 10 minutes until al dente. Drain well.
Mix together olive oil, salt, lemon zest and juice and garlic. Pour over couscous and leave to cool.
Once the couscous cooled down to room temperature, stir through the parsley.
Can be stored in the fridge for up to 24 hours.
