My Mum has been making this delicious dish for years. Crunchy filo, sharp feta, spinach and the nuttiness of the pinenuts come together to create this classic. It’s a great dish to bring along to your next potluck, or dinner party.
Spanakoptia
2 cups of crumbled feta (FETA)
1 packet of frozen spinach leaves defrosted (SPINL)
2 large onions diced
2 cups of cottage cheese
5 eggs
1/3 of a cup of pinenuts (PINEN500)
Salt and pepper (SALTCSP)
2 tablespoons of plain flour (FLOURP)
200g of melted butter (BUTS)
1 packet of filo pastry(FILOP750)
In a frying pan cook the onions in butter until soft. Once the spinach has been defrosted place it in a clean tea towel and squeeze out all of the liquid - this ensures you do not get a soggy pie. Place in a large bowl with the feta, cooked onions, cottage cheese, lightly beaten eggs, pinenuts and flour. Season to taste and mix well.
Using a pastry brush coat the outside of a large baking dish with melted butter (approx. 35 * 20cm). Place a leaf of filo in the dish – it will go up the side a little which is fine. Brush with butter and repeat until you have 8 stacked on top of each with butter sandwiched between each one.
Spread out half of the filling on the pastry and then continue with another 8 layers of pastry. Apply the remaining filling, spreading to the edges. Fold down the excess pastry that has climbed up sides, making neat little corners then place another 8 layers of filo being generous with the butter. If you have some on hand a spoonful of cumin or fennel seeds can be sprinkled on top.
Bake at 180C for 45 minutes until golden.
Once cooked cut with a sharp knife into squares, can be eaten straight out of the oven or at room temperature.
