This spelt muesli bar is an easy, throw together recipe. Apart from the spelt feel free to add whatever nuts and seeds you have on hand – here I have used cashews, pumpkin seeds, sesame seeds and linseeds.
Spelt Muesli Bars
¾ cup of golden brown rice syrup (SYRBR454)
¼ cup of coconut oil (OLICOV)
1 pinch of salt (SALTI1)
3 cups of puffed spelt (SPELT)
1 cup of assorted nuts and seeds (CASSWP, LINSEED1, PUMPK, SESAME1)
½ cup of dark chocolate finely chopped (CHOCDG)
Preheat your oven to 160C and line a square tin 20cm tin with baking paper.
Melt the golden brown rice syrup and coconut oil over a low heat to combine. Leave to cool for 10 minutes.
Meanwhile measure out your spelt, nuts, seeds and salt in a large bowl. Once the syrup has cooled add this mixture to spelt and mix thoroughly. Add the chocolate at this stage to ensure it does not melt too much.
I usually finish it off with my hands until everything is coated in the syrup.
Press the mixture into your lined tray and place the oven for 8 minutes.
Leave to cool for half an hour before cutting into pieces.
Store in an airtight container in the fridge for up to a week.
