This spicy Mexican inspired dish packs a punch! You can prepare it in the morning before work, and when you return you will be greeted with fiery ready-made pulled chicken. This can be served over rice, in tacos, or in enchiladas, as I have done here.
Spicy Mexican Pulled Chicked with Kidney Beans
1 cup of dried red kidney beans, soaked overnight (BEADR1)
1.2 kg of boneless, skinless chicken thighs
A 400 gram tin of Sofia cherry tomatoes (TOMCM)
½ a cup of water
½ a tin of smoked jalapenos in adobe sauce (PEPC)
2 tablespoons of crushed garlic (GARLCR)
4-5 dried bay leaves (BAYL500)
1 teaspoon of ground cumin (CUMG500)
1 teaspoon of smoked paprika (PAPSMKD)
½ a teaspoon of chilli flakes (CHIFL)
½ a teaspoon of rubbed oregano (OREG500R)
2 teaspoons of salt (SALTI1)
1 onion finely diced
1 carrot, finely diced
2 capsicums, finely diced
1 handful of freshly chopped coriander
Juice of two limes
Simply place all ingredients, except the coriander and lime in your slow cooker and cook on high for 6 hours.
After the 6 hours the chicken should be tender and falling apart and the beans should be soft.
Fish out the bay leaves. And then use two forks to shred the chicken.
Add freshly chopped coriander and lime juice and serve immediately.
This can be stored in the fridge for up to 4 days and frozen or two months.
Note : it’s really important that the red kidney beans are cooked thoroughly; they should be able to be easily crushed against the roof of your mouth when you eat them. Red kidney beans contain a toxin that’s degraded when cooked; if they are not cooked properly this toxin will not break down and this can lead to painful gastro problems.
