Yum, yum, yum, yum. I love this recipe so much I had my boys cook it at my wedding. I cooked a few of these back in my 20’s in Sydney at a restaurant called Le Sands. The boss’s were Greek-so when my friend and head chef made this for them-I think he instantly got an extra $5 per hour. It was a hit-we served it with lemon broccoli, roast root vegetables and Tzatziki.
Tomato roast lamb shoulder, tzatziki dressing
Lamb shoulder
1.2-1.4 kg x Lamb shoulder bone in
1 x Tomato sauce recipe
75g x Extra virgin olive oil
Sea salt
Tomato sauce (makes 1 shoulder recipe)
3 x small tins of whole tomato
1 x white onion
5 x peeled garlic cloves
good sprig of thyme
good sprig of rosemary
2 lemon peel
Tzatziki
2 x cucumber-peeled, de-seed and roughly cut up
3Tbsp x Extra virgin olive oil
1 x lemon juice
3 x cloves of garlic roughly cut up
4 x sprigs of mint roughly cut up
Sea salt and milled pepper to taste
250g x natural yoghurt
Lamb shoulder
Pre heat your oven to 90C
In a hot pan or on the BBQ seal your lamb until very brown
Lay the sauce in your roasting tray, lamb on top of the sauce, dress your lamb with the oil and then give the lamb and sauce a good seasoning with the salt.
Cover with baking paper and then tightly wrap in tin foil place in the oven.
The meat will take between 7-10 hours depending on your oven. Your know when it’s done-the bone will want to come lose very easily.
Leave the meat covered when finished cooking for minimum of 45 minutes. This gives you time to get your vegetables cooked, salad made and tzatziki prepped.
Tomato sauce (makes 1 shoulder recipe)
Get everything into a pot and blend to make a puree.
Tzatziki
Blend all ingredients then mix with yoghurt.
Leave for 1-2 hours if you can to let the flavours develop.
To finish
Pre-heat oven to maximum
Bake lamb in oven with little olive oil over it until crispy (10-15 minutes)
Put tomato sauce into sauce pot, remove as much fat as you can and reheat.
